As a mom, I sometimes need a quick dinner recipe that I can throw together. . . the Impossibly Easy Veggie Pie is one of those of kinda meals.
It’s a super easy, quick & cheap meal!
I tried this recipe a while ago and recently decided to make it again. Not only has it been tough that we’ve been stuck in the house for weeks, I really don’t like spending hours in the kitchen.

This Betty Crocker recipe is considered a healthy low carb meal – which is a plus!
You can substitute different vegetables and add as much or as little flavor as you like.
I personally like adding more seasonings, so if you like a lot of flavor, I highly recommend that you do as well.
Just remember to be mindful of your little ones, they can be a little picky, and if it has too much of something they don’t like. We all know how much the struggle is to get them to eat certain things! #momproblems

Impossibly Easy Veggie Pie

- 2 cup Broccoli and/or Cauliflower ([thawed and rinsed])
- 1/3 cup Chopped Onion ([use onion powder as an alternative])
- 1/3 cup Chopped Bell Pepper
- 1 cup Shredded Cheese
- 1/2 cup Original Bisquick Mix
- 1 cup Milk
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
- 2 Eggs
- Add Extra Flavor (Optional) ([add additional seasonings to your taste])
Heat oven to 400 degrees.
Grease the pie plate with a little butter, oil or cooking spray.
Boil or steam broccoli for approx 5 minutes or until almost tender; drain thoroughly. If you prefer less cooked broccoli, skip this step.
In a bowl, mix broccoli, onion, bell pepper and cheese.
Add remaining ingredients until blended and then pour mix into the pie plate.
Bake uncovered 30-35 minutes or until golden brown and knife inserted in center come out clean.
Let cool for 5 minutes before cutting.
Side note: You can follow the recipe or change it to your liking.
In the video, you can see that I mixed everything together and poured it all in the pan together. The recipe instructs you to mix the ingredients separately and then pour the Bisquik mixture into the pan. I did mine a little differently however it still came out really good.
